Deer hunting is a national tradition, but game processing infrastructure is not evenly distributed. Some states have dense networks of experienced processors in nearly every county; others have thin coverage that can mean long drives or long waits. Here is which states have the strongest game processing scenes.
Texas
Texas has the largest white-tailed deer herd in the country and some of the most hunting-engaged populations of any state. The infrastructure that has developed around it is extensive. In the Hill Country, the Piney Woods of East Texas, and South Texas brush country, game processors are a standard part of rural life. Many ranches have on-site skinning facilities and relationships with processors within a short drive.

Michigan
Michigan is one of the top deer hunting states in the country by sheer volume of hunters and deer harvested annually. The Upper and Lower Peninsulas both have dense coverage of game processors. During November's firearms season, every processor in the state is running at capacity.

Pennsylvania
Pennsylvania's deer hunting culture runs deep. The state's game commission manages one of the largest deer herds in the East, and the network of custom butchers and game processors - many in rural central Pennsylvania - is extensive. Amish and Mennonite processors in particular are known for quality.

Missouri and Kansas
The heart of the Midwest deer belt has dense processing coverage. Both states have excellent whitetail habitat and hunting traditions that go back generations, with custom processors and small-town locker plants serving hunters in nearly every rural county.
Georgia and South Carolina
The Southeast has some of the longest deer seasons in the country. Georgia and South Carolina both have extensive game processing networks, particularly in their rural counties. Wild boar processing is also widely available alongside deer in these states.
Wisconsin
Wisconsin's deer season is a cultural event - schools and some businesses close. The state has an enormous network of licensed processors handling deer, bear, and turkey across its agricultural and wooded regions.
