The quality is genuine and the prices are fair.
Lancaster County: Amish and Mennonite Butchering
Lancaster County is home to the largest Amish community in the country. Amish and Mennonite farms raise livestock with traditional methods - pasture-based, small scale, with minimal input costs - and process through community butcher operations or small custom shops. The result is pork and beef with flavor and quality that reflects careful, traditional husbandry.
Amish farm stands, farmers markets in the area, and local custom processors in Lancaster County are excellent sources for direct-farm meat, quality sausage, and custom butchering.
Pittsburgh and Western Pennsylvania
Pittsburgh's immigrant neighborhoods - particularly Polish Hill, Bloomfield (Italian), and the South Side - had traditional butcher shops serving their communities for generations. Some survive. Rural central Pennsylvania - particularly in the Ridge and Valley region from Centre County through Huntingdon and Juniata counties - has some of the state's most active deer hunting and custom butchering operations. Small processors in these counties handle deer, bear, and custom beef with generations of accumulated skill.
