Finding someone to process a lamb or sheep is harder than finding a deer or beef processor. Sheep and lamb are a smaller market, and not all custom butchers work with them. Here is how to track down a processor in your area.

Why Lamb Processing Is Less Common

Sheep and lamb are a smaller segment of American meat production compared to beef, pork, and poultry. Most custom meat processors focus on the high-volume species. Slaughtering and processing a lamb or sheep requires specific handling - the animal is smaller than a beef calf but the hide, organs, and carcass handling are different from deer or hog. Not all processors have the equipment or experience.

Buying Lamb Direct from a Farm
