A meat CSA (Community Supported Agriculture) is one of the smartest ways to stock your freezer with high-quality, locally-raised protein. You pay upfront for a share of a farm's production and receive regular deliveries of farm-fresh meat.
Kansas sits in the heart of cattle country. The Flint Hills of Kansas are some of the most productive grasslands in North America, and the state has been a center of the beef industry since the days of the cattle drives along the Chisholm Trail.
Most meat CSA shares are available in small (10-15 lbs/month), medium (20-25 lbs/month), and large (30+ lbs/month) sizes. Expect a mix of ground meat, roasts, steaks or chops, and sometimes specialty items.
Many meat CSA programs run on a seasonal basis with spring and fall start dates. Sign-up windows often fill quickly - the most popular farms may have waiting lists.
